Bringing Sexy Seth Back
Week two of Seth's vegan adventure comes to a close and he has decided that he will remain vegan. There are just too many benefits from being on a vegan diet that eating animal products wasn't worth it anymore.
Yeah right! Can you really imagine Seth going vegan? He couldn't wait to eat a grilled cheese sandwich and some Hamburger Helper (something that is usually forbidden in this house). Even though Seth won't completely give up meat and dairy, there are so many benefits that came out of these past few weeks.
It only took a few days on a vegan plant-based diet for Seth's skin to start looking fresher and more radiant. The rosacea rash on the back of his arms cleared-up. He also lost his muffin top and was able to wear clothes that hadn't fit for years. He was looking as sexy as he did the day I met him. Really, this vegan diet brought sexy Seth back! But the best thing that came out of this was the new array of vegetables that Seth now enjoys.
When I asked Seth how he felt about all the vegan meals that he ate he said, "It's not as gross as I thought it would be. I never thought it looked good when you were eating it, but it actually tastes alright." I was pleasantly surprised to hear that he actually enjoyed eating kale! Really! He also now likes beets and carrots, and will tolerate cauliflower, broccoli, spinach, Brussel's sprouts, and cabbage. It was really fun incorporating more veggies into Seth's diet while I could. So even though Seth isn't completely vegan, he does want to eat less animal products, and he is open to eating more veggies. Since life is all about balance, I'm happy that he'll be enjoying his Hamburger Helper with a side of sautéed kale.
